quinoa with vegetables

I'd been wanting to try quinoa for ages ... well it finally happened and I gotta tell ya it is delicious and it's one of those darn super foods. Up there high on the list with salmon, broccoli and blueberries. Super easy to cook and very versatile, it can be made into sweetish things like breakfast cereal or quinoa pudding (second cousin to rice pudding) or as a substitute for rice or pasta in any savoury dish. We ate it the first time as a side dish with barbecued salmon.

Quinoa & vegetables

1 cup quinoa
1 cup water
1 cup no salt added chicken broth

Put water, broth & quinoa into a pot, and bring to a boil. Turn the heat to low and let simmer 12 minutes with the lid on. Remove lid, fluff a bit like you would cooking bulgur or rice. Add whatever extras you like or use plain. My additions -

1 grated carrot
1 cup fresh peas
1 cup corn
3 green onion/scallions finely chopped
handful of chopped chives
12 or so grape tomatoes halved

and oh my goodness cover girls made a magic marker for your lips. uh huh ! sighing

  1. Quinoa is ok, so long as you flavour it well, but I wish it didn't look quite so much like insect eggs.... just saying. Sorry.....

  2. I was thinking the same thing, the insect egg, teeny, tiny worm thing but I got over that and I like it. Cooking with half broth half water added lots of flavour and I souped mine up with a big blob of Patak's curry paste.

    I'm attempting a no wheat, no sugar cleanse (snort) for a minimum of 2 weeks ideally (I know ... you're laughing so hard you've fallen off your chair - well get back up and keep reading). Today's day 2, yesterday was a minor success but only after I polished off the remaining half bag of Swedish Fish, from my TTD drawer stash of good things. Yummy gummy candy eh hem & pure sugar.

    Day 2 - 8:23 am - so far, so good
